Dungeness Crab Omelet "Wrangell Omelet"

The Wrangell Omelet is a Dungeness crab recipe you'll want to hang onto and make over and over again.

Here's what you do:

6 eggs beaten separated
1/2 cup shredded Colby Jack cheese (or cheese of your choice), separated
1/3 yellow onion finely chopped
1 clove garlic finely chopped
1/3 red bell pepper finely chopped
Tbs butter
1 cup Dungeness crab meat (cooked)

Saute onion, pepper and garlic in butter until slightly soft (sweated)
Add Dungeness crab meat. Toss lightly to mix and heat thru. Remove from heat and set aside, dividing into two equal amounts.

Preheat egg pan and be sure to add a little oil (or butter if you prefer) before adding the eggs. Cook eggs till the top shows semi-soft, then flip egg "patty" over and sprinkle about 1/8 cup cheese on half egg patty, then top cheese with crab mixture (one of the two parts) top crab with remainder of cheese and cover pan with lid so the cheese melts. Fold empty half of omelet over crab filling and serve. Repeat with remaining ingredients
