The National Heart and Lung Institute lists oysters as a great food to include in a person's low-cholesterol diet and they are lower in fat, cholesterol, and calories than poultry. They are a very good source of protein, carbohydrates, calcium and are high in vitamin A, B1 (thiamin), B2(riboflavin), B3 (niacin), C (ascorbic acid), and D (calciferol). Four to five medium sized oysters supplies the recommended daily allowance of iron, copper, iodine, magnesium, calcium, zinc, manganese and phosphorus.

Information, Suggestions and Tips

You should always cook oysters thoroughly, which will ensure that harmful bacteria is totally killed off. People who suffer from medical conditions such as liver disease, cancer, immune deficiencies, hepatitis, and diabetes should avoid eating raw oysters. If you like them that way, please check with your doctor first to make sure you won't have a problem.

 

Freshly-shucked are always going to yield the best taste in any oyster recipe, simple or complex. The younger and smaller ones are going to have the most tender meat. When you cook them, cook them very lightly. Only cook until the mantle curls otherwise you'll end up with a very rubbery texture. Have you ever eaten a pencil eraser? Eww! In other words, keep your eye on them. ;) Oysters are naturally salty little critters, so you'll want to avoid salting them. Herbs that go well with them are thyme, fennel seed, paprika, and parsley.


 

A Few Tasty Recipes For You To Enjoy

 

Oyster Recipes: Pacific Oyster Bisque

12 oz container fresh Pacific oysters, chopped

2 tablespoons butter

3 cups milk

1/4 cup instant mashed potato granules

1 bay leaf

1 egg, separated

1 teaspoon garlic salt

1 10 1/2 oz can condensed tomato soup

2 teaspoons Worcestershire

Parsley flakes or dash paprika

Dash nutmeg

Oyster BisquePre-cook oysters, drain and chop. Set oysters aside. Scald milk, seasoning and butter. Stir in instant mashed potato granules. Add small amount of milk mixture to slightly beaten egg yolk, then combine with rest of milk mixture. Stir in condensed tomato soup and blend well. Add chopped oysters and return to low heat. Meanwhile, beat egg white until stiff. Fold beaten egg white into soup. Garnish with parsley flakes or paprika and serve immediately. Serves 4-6.

 

 


Oyster Recipes: Poached Eggs With Oysters And Ham

8 poached eggs

Seasonings to taste

2 slices cold ham, chopped not too fine

2 cups thick white sauce

8 oysters, off the shell, cut in halves

To make White Sauce: scald 1 pint of milk. Melt 3 tablespoons of butter in a saucepan. Add half a teaspoon of salt, 4 tablespoons of flour, and let cook for one minute, stirring constantly. Add the milk little by little, stirring gently until it boils. Let it boil for 3 minutes.


1. When the white sauce is done and while still cooking, add the oysters, seasonings and ham.
2. Let cook slowly for about 5 minutes.
3. Pour the mixture over the poached eggs and serve.

 

 


Oyster Recipes: Oyster Casino

2 dozen Pacific oysters in half shell, if possible

2 tbsp. sherry

4 slices thinly cut, lean bacon, diced

1 tbsp. oyster juice

2 tbsp. butter

1 tsp. Worcestershire sauce

2 sm. onions, very finely diced or minced

4 drops lemon juice

1 c. very finely diced green or red peppers

Shake of salt

Good grind of pepper

Oyster CasinoFry the diced bacon until just crispy. Melt the butter in a saucepan, add the onion and peppers, season with salt (remember bacon and oyster juice are both salty) and pepper. Simmer for 5 minutes until the vegetables are tender. Add bacon, oyster juice, sauce, lemon juice and sherry.


If you have no oyster shells, use scallop shells or toasted rounds of bread spread lightly with mayonnaise. Place an oyster in each shell or alternative. Top with a spoonful of the bacon mixture. Place the oysters in patty tins to hold them stead.


Just before required, place under a preheated grill. Grill 3 minutes. Serve with thin slices of buttered whole meal, or rye bread. This oyster recipe servers 8 as an entree.

 

 


Oyster Recipes: Hangtown Fry

This oyster recipe was the food of choice for hungry California miners in the early 1800s. It was a sign that they had struck it rich and had gold to throw around. It consists of fried, breaded oysters, eggs and bacon, cooked together like an omelet. Soon, the Hangtown Fry had swept up and down the Pacific Coast as one of the more popular meals of the richy-rich.

1 (12 oz.) can shucked oysters, fresh or frozen

1/3 c. dry bread crumbs

3 slices bacon

1/3 c. flour

6 eggs, beaten

4 drops lemon juice

1/4 c. water

2 tbsp. butter

1/4 tsp. salt

Parsley

Dash of pepper

Thaw frozen oysters. Drain oysters thoroughly. Fry bacon in a 10-inch fry pan until crisp. Drain on absorbent paper. Pour off bacon fat and reserve. Wash the pan.


Combine egg, water and seasonings. Combine crumbs and flour. Dip oysters in egg and roll in crumb mixture. Melt butter and bacon fat in fry pan. Fry oysters in hot fat at moderate heat for 2 to 3 minutes or until lightly browned. Turn carefully and fry 2 to 3 minutes longer or until lightly browned. Crumble bacon over top of oysters.


Pour egg mixture over bacon and oysters. Cook over low heat. Gently lift edge of omelet to allow uncooked egg to flow to bottom of pan. cook until the egg is set. Loosen around edges and bottom of omelet with a spatula. Roll omelet and turn out into a warm serving platter. Garnish with parsley. Serve immediately. Makes 6 servings.

 

 


Oyster Recipes: Traditional Oysters Rockefeller

This is one of the most popular oyster recipes ever. If you like rich-tasting seafood, you'll love this.

1-1/2 cups cooked spinach, well drained

1/2 teaspoon salt

1/3 cup fresh breadcrumbs

dash Tabasco

1/4 cup chopped green onions

3 tablespoons extra virgin olive oil

2 slices cooked bacon, crumbled

1 teaspoon Pernod or other anise-flavored liqueur

1 tablespoon chopped fresh parsley

Preheat oven to 450 degrees F.

Using a food processor, chop the spinach, breadcrumbs, green onions, bacon and parsley. Add the Oysters Rockefellerremaining ingredients and process until finely chopped but not pureed, about 10 seconds. Layer the oysters in their half shells on a pan with rock salt. Spoon some of the spinach mixture one each oyster. Bake 10 minutes until cooked through, then broil until browned on top. Serve hot.

Yield: 24 oysters

 

 


Oyster Recipes: Stir-Fry Oysters with Spicy Szechuan Sauce

1 pint shucked oysters

1/4 teaspoon chili powder

1 tablespoon dry sherry or rice wine

1 tablespoon oil

1 tablespoon reduced-sodium soy sauce

1 tablespoon green onion, thinly sliced

1 tablespoon tomato paste

1 teaspoon grated ginger root

1 teaspoon sugar

1/4 teaspoon sesame oil

Hot cooked rice or rice noodles for serving


Drain the oysters; pat dry and reserve. To make sauce, combine rice wine, soy sauce,
tomato paste, sugar and chili powder; reserve. Heat oil in large nonstick skillet over
medium high heat. Add green onion and ginger; stir-fry briefly, about 15 seconds. Add
oysters and stir-fry 45 seconds. Add sauce and stir-fry 3-4 minutes or until edges of
oysters curl. Add sesame oil and stir-fry 30 seconds longer. Serve hot with rice or rice
noodles if desired. Makes 4 to 6 servings.
